Sarah’s Chuck-It-All-In Carbonara

Here’s another family 15 minute favourite…well, I say favourite, Son hates it because I use fake-on, not bacon. But, you know, the thought is there.

You will need:

One onion, diced
1 half package of (streaky) bacon (or fake-on), cut into thin strips
4 eggs
6-8oz of good quality mature/extra sharp cheddar, grated
3floz/90ml double/heavy cream
1 large knob of butter
Black pepper and garlic salt to taste
Spaghetti (enough for 5-6 people)

In your best cooking pan melt the butter over a medium heat, while putting on another pan of water to boil. Add the onion and bacon (fake-on) to the melted butter and sauté until bacon is crisp and onion is just starting to brown. Put eggs, cheese and cream into your favourite blender vessel, season and whizz together until thick and creamy. Boil pasta for the recommended time. Drain and add to the bacon and onion mix. Stir the cream, egg and cheese mix into the hot pasta, making sure the pasta is thoroughly coated and warm gently until the mixture begins to thicken (meaning the eggs are cooked).

Serves 5 hungry or 6 not so hungry people.
