Cranberry and Chocolate Chip Oatmeal Cookies

In order to make these delicious discs of loveliness, you will need:

5oz plain (all purpose) flour

3oz rolled oats

3oz sugar

2oz dried cranberries

2oz semi-sweet (50% cocoa) small chocolate chips (the ones I use are Ghirardelli)

4oz softened butter

2tblsps golden syrup (or thereabouts, I usually dollop it in till it looks right)

2tsps baking powder

1tsp vanilla extract/essence (basically the *real* stuff)

Preheat the oven to 375F/180C. Combine the dry ingredients. Add the wet ingredients and bring together in your favourite method – I use my hands, you might choose a mixer with a non-cutting blade. Lightly grease your favourite cookie sheet. Spoon or roll blobs of the mixture into nice sized cookies – this recipe doesn’t spread much. Place on cookie sheet then cook on the middle shelf of the oven for 15 minutes, or until golden brown. Allow to set for a minute on removal from the oven, then transfer to a cooling rack. Eat when warm enough to do so without burning your mouth 😉
