Bad Banana Bread

You know those bad black bananas? Of course, you do. You’ll need those two that are at the bottom of the fruit bowl, allowing the fruit flies to achieve Nirvana.

You will also need:

5oz (140g/approx 2/3cup) plain (all-purpose) flour

1tsp baking powder*

about 6oz (170g/approx 3/4 cup) of whatever nuts and dried fruit you have hanging around at the back of your cupboard…you could also try resurrecting some of the really old, nasty, dried out raisins by soaking them overnight in whatever spirits were leftover from Christmas.

A grated carrot or apple (or a pot of applesauce).

1/2tsp of cinnamon or apple pie spice

1 egg (optional* – you could also use 2floz/60ml/approx 1/4 cup oil – both things make for a less crumbly bread)

Preheat oven at 180C/350F. Place dry ingredients in a bowl and stir together. With a fork, mash the bananas into a paste and add grated carrot or apple (or applesauce). Fold into dry ingredients (with the optional egg if using). Spread batter into a well greased loaf tin and sprinkle with sugar. Bake for approx 40 mins or until a sharp knife in the middle comes out clean

*Note: you may find you need a little more baking powder if you choose not to use an egg.
